Research Interests

Areas of research interest focus on pre- and post-harvest methodologies that impact factors considered traits of value to the red meat industry and red meat animal producers.  Current programs of interest include:

  1. Pre-harvest production and management factors that affect lean meat yield, quality and profitability for beef and pork
  2. The use of novel feed stuffs on animal performance, red meat yield, quality, composition, tenderness and shelf-life
  3. Identifying methods to increase the value of red meat products through muscle profiling
  4. Genetic and environmental differences that influence the rate of lean development and deposition as influenced by the autocrine, paracrine and endocrine systems
  5. Investigation of pre- and post-harvest food safety strategies
